Frittata!!!!

This morning I actually got to cook my own breakfast. Between school and work and all of the other ways I give away my time, I have not been able to get a knife in my hand and burner going in months. The extent of my cooking has involved rice, lentils and a rice cooker. An easy way to have homemade food, but not cooking. This week I finally made it to the farmer's market and bought eggs, bread, onions, spinach and shallots. My meal this morning was almost completely local (the olive oil is from Spain).

Eating local and homemade food is a mood elevator for me. I support local farmers and put my own energy into what goes into my body. I am determined to include more selfcare in my days, weeks, months, and years, and today reminded me how cooking is a necessary activity for me.

More cooking = more happy!
